The two-day, one-night Omi beef x Kobe beef tasting plan HYART is preparing

What HYART is currently planning is a tasting plan that lets you leisurely savor two of the three great wagyu brands, Omi beef and Kobe beef, over two days and one night. Starting with Omi beef in Shiga and traveling on to Hyogo the next day to savor Kobe beef, its distinctive feature is that you can compare the two wagyu brands while visiting the production regions themselves. Visit a cattle farm in the Kobe area, and then savor Kobe beef

At Matsukiya, where the first day's dinner is planned, we plan an experience in which an in-house chef grills the ingredients right before you while explaining them one by one. Rather than simply having dishes brought out, you can savor them while hearing which cut is grilled and how, so you can approach the meat with background knowledge for the tasting comparison. This flow lets you establish a “baseline” with the first day's Omi beef before savoring Kobe beef the next day.

The visit to a cattle farm in the Kobe area planned for the second day is a time to learn how that wagyu is raised before you savor it. By tasting it after learning the background of how it is raised, you can perceive the difference from Omi beef in a more three-dimensional way. Omi beef is at the core of the dining experience in HYART's itineraries

Omi beef is a central dining experience not only on the first day of the tasting plan but also in HYART's model courses. In the Shiga model course, we incorporate an Omi beef dinner at Matsukiya as the finale of the trip. The daytime experiences are varied, such as a zazen meditation experience at Enryaku-ji on Mt. Hiei, a Chikubu Island cruise, and pottery and matcha experiences in Shigaraki, but the flow of savoring Omi beef is common to all. Expanding to Matsusaka beef and a three-region tour

Matsusaka beef (Mie Prefecture), the other of the three great wagyu brands, is not included in the current tasting plan. For now, the plan is centered on having you carefully savor the two brands, Omi beef and Kobe beef, together with production-region visits and tableside cooking. An itinerary that extends all the way to Mie to tour all three production regions places a greater burden in terms of days and stamina, so we position it as an expansion that can be considered in the future depending on your wishes and length of stay.
